You and your family will enjoy both making and eating this Drunken Salsa. It is a typical salsa that accompanies the Mexican lamb barbacoa and carne asada tacos. The Drunken salsa was first created in the Mexican state of Hidalgo where the lamb barbacoa originated. In Mexico, the term “barbacoa” refers mainly to the traditional method used to prepare a variety of meats and then steam or slow cook them in their own juice. Although there are several versions of this salsa, they are all made with an alcoholic beverage (tequila reposado, clear beer, or white pulque). Hence the name, Drunken Salsa. 

 

Usted y su familia disfrutarán haciendo y comiendo esta Salsa Borracha. La salsa Borracha es una salsa típica que acompaña la barbacoa de borrego y los tacos de carne asada. Fue creada en el estado mexicano de Hidalgo donde se originó la barbacoa de borrego. En México, el término barbacoa se refiere principalmente al método tradicional utilizado para preparar diversas carnes y cocinándolas en su propio jugo o al vapor debajo de la tierra (barbacoa de hoyo). Aunque hay varias versiones de esta salsa, todas están elaboradas con una bebida alcohólica (tequila reposado, cerveza clara o pulque blanco). De ahí su nombre, Salsa Borracha.

Recipe

What you need to make an easy, authentic, and delicious Salsa Borracha (Drunken Salsa)…

 

1 TOCANI Salsa Borracha Kit (Drunken Salsa Kit)

3 medium ripe tomatoes

4 garlics cut in half

4 cups of water

3 Tablespoons of your choice of Tequila (Reposado), Mezcal, Pulque or light beer.

1 teaspoon of sea salt

Queso Fresco (Mexican Cheese) and 1 Avocado (sliced) optional, but highly recommended

 

DIRECTIONS

  1. Boil the tomatoes until soft, when done place them in a bowl and reserve the hot water.
  2. While the tomatoes are cooking remove the stems from all chiles. Remove the seeds only from the large chiles and cut them in half.
  3. Heat the 3 tablespoons of oil, lightly fry the garlic, then the chiles (do not burn) and place them in a bowl.
  4. Soak only the large fried chiles in the hot water you reserved for 10 mins.
  5. Place all the chiles and ingredients in a blender adding ½ cup of the reserved water and the alcoholic beverage you selected. Blend until lightly coarse. Pour salsa mixture into the skillet with the left-over oil and fry for 5 mins. Add salt to taste. Pour your salsa in a bowl and top it with avocado slices and crumbled Queso Fresco.
