3 medium ripe tomatoes
4 cups of water
4 garlic cloves cut in half
¼ onion
3 Tablespoons of olive or avocado oil

- As the water boils, dry roast tomatoes on a heavy skillet or comal (provides best authentic flavor). Or you can boil the tomatoes and reserve the hot water.
- While the tomatoes are cooking/roasting, remove stems from all chiles. Remove the seeds only from the large chiles and cut them in half.
- Heat the 3 tablespoons of oil and lightly fry the garlic and onion, then fry the chiles (do not burn) set aside.
- Soak only the large chiles in the hot water you reserved for approx. 10 mins.
- Blend all the chiles and ingredients in the blender until your desired texture. Add salt to taste.
